Pesto Popovers
Serves 6-8
Want to know Hot Mama’s secret to popovers that never
stick to the tin?
Spray the popover (or muffin) tin with vegetable cooking
spray after it heats in the oven!

Ingredients:
2 large eggs
1 cup low fat (1% or 2%) milk
1 cup sifted all-purpose flour
1/4 teaspoon salt
3-4 teaspoons Lazy Chef Traditional Pesto

Preparation:

Preheat oven to 450 degrees and place ungreased
popover tin (or large muffin tin) in oven. While the tin is
heating, make the batter.

Break eggs into a medium mixing bowl.

Add milk and beat until well blended.

Add sifted flour and salt; continue beating until batter is
smooth and thick.

Take popover tin (careful, it will be very hot!) out of oven
and place on heat proof surface. Spray each cup with
vegetable cooking spray.

Pour ½ cup of batter into each cup.

Top each popover with ½ teaspoon of Lazy Chef Traditional
Pesto.

Bake at 450 degrees for 20 minutes, then reduce heat to 350
degrees and bake
10-12 minutes longer until the popovers are golden brown.

Remove from oven and make a small slit in each popover to
allow steam to escape. Serve right away.
Makes 6 (popover tin) or 8 (muffin tin)
