Roasted Red Pepper
Puff
Pastry Pie
Serves 4-6
A frozen puff pastry sheet makes this puffy pie a quick
appetizer or snack for four to six!

Ingredients:
1 sheet of frozen puff pastry dough,
defrosted
1- 6.5 oz. container of Lazy Chef Roasted Red
Pepper Pesto
3 very thin slices of red onion (separated into onion
rings) or slice 1 scallion (white & green parts), sliced
very thin
½ cup of grated mozzarella, Cheddar, or Monterey Jack cheese

Preparation:

Preheat the oven to 400 degrees.

Lightly spray an 8” x 8” corning ware
or glass baking dish with cooking spray and lay
the puff pastry dough in it.

Using the back of a soup spoon, spread
a thin layer of the Lazy Chef Roasted Red
Pepper Pesto over all of the puff pastry dough.

Spread the red onions (or scallions)
over the pesto.

Spread the cheese all over the top of
the pie.

Bake the pie for 25 minutes or until
the pastry is puffed and a rich golden color.
Cut into 4-6 servings and serve
immediately. The pie tastes great with a side of crisp apple
and pear slices, fresh grapes and a glass of your favorite
wine.
